Supporting Local Fisherman
If you read our recent newsletter then you’ll have met the amazing fisherman at W Steveson & Sons fishmongers. Working with the seasons of the sea their Dover Sole is caught off the Cornish coast and not only prepared with care, but a sustainable choice that supports local fishing communities.
Simple, fresh, and full of flavour, the delicate flesh and taste of the Dover Sole make it a great choice for a
special occasion such as Father’s Day and they have even provided a mouth watering recipe below! We can’t wait for you to try it!
Recipe idea: lightly dust the fish with seasoned flour, pan fry then for around 3-4 minutes each side, or until golden in colour and cooked through. Remove the fish and keep warm. Wipe the pan clean, add 50g of unsalted butter until it melts and turns brown and smells nutty. Add a teaspoon of capers and a good squeeze of lemon juice and let it bubble for around 30 seconds. Pour the sauce over the fish, season with freshly chopped parsley and serve with seasonal greens and new potatoes.
